great with pesto green beans and salad. Can be made vegetarian if chicken stock is replaced w veggie stock.

Recipe Ingredients for Polenta with tomato sauce

1 3/4 c chicken stock
1 T balsamic vinegar
1 c onion, chopped
1/3 c celery, chopped
2 t garlic, minced
2 tomatoes, large, chopped (or 14 oz diced tomatoes)
1 green bell pepper, chopped
1/4 t basil
1/4 t oregano
1 1/4 c yellow cornmeal
1 c water
2 c chicken stock
1/4 c parmesan
1/4 c cheddar, sharp, shredded
1 T parsley

Recipe Directions for Polenta with tomato sauce

  1. to make sauce: Im 10" skillet, combine chicken stock and vinegar: bring to boil over med-high heat. Add onions, celery, and garlic. Cook and stir 5 min. Add tomatoes, peppers, basil , and oregano; bring to boil. Reduce heat to low; cook 30 min, til sauce is thick. let cool slightly; puree in blender or food processor.

  2. For Polenta: Meanwhile, in a med saucepan, combine cornmeal and water; whisk til well blended. Add chicken stock; bring to boil over med-hi heat. Whisk constantly, cook for 10-15 min, or til polenta is thick. Remove from heat and stir in parm and cheddar. Spread polenta in 9" rond no-stick cake pan. Refridgerate 20 min, until polenta is set.

  3. Coat 10 no-stick skillet with no-stick spray. Cut polenta into 4 wedges; place in skillet. Saute over med-high heat 5-8 min, or til poenta is golen brown, turning once. Remove to serving plates.

  4. Reheat tomato sauce in skillet. Spoon over polenta wedges, Sprinkle with parsley.
