Recipe Ingredients for Polenta with Summer Squash and Blue Cheese

1 cup Cornmeal
1/2 cup blue cheese
547 grams zucchini
35 grams hot peppers

Recipe Directions for Polenta with Summer Squash and Blue Cheese

  1. Put 2 qt sauce pan over med heat and add oil. Add squash (chopped 547 g squash, 2 small + 1 large)and saute until soft and browned. Mix I cup of water with the 1 cupcornmeal, salt and cayenne.

  2. Bring 3 cups water to boil and sitr in moist cornmeal as it boils. Reduce heat to medium and cook stirring occasionally 20-25 minutes.

  3. Add the 1/2 cup blue cheese when polenta is thick and pulls away from sides of the pan. Stir in nuts if desired (1 cup). Stir in squash.
