Polenta Recipe

Makes 4 servings



Corn meal mush. Italian grits. Whatever it is, it's delicious. Eat it hot and cheesy or let it cool overnight, slice and fry, then top it with maple syrup. Add sun-dried tomatoes and basil to the cooking water and serve it as a side dish. Top stews with it. The possibilities are only as limited as your imagination.

Recipe Ingredients for Polenta

1 cup yellow corn meal, enriched, degermed
3 cups water
1/2 tsp. salt

Recipe Directions for Polenta

  1. Boil two cups of the water. In a bowl, stir together the corn meal, salt, and remaining cup of water. Add the corn meal mixture to the boiling water slowly, stirring constantly. Reduce heat to low, and cook for fifteen minutes, stirring occasionally, until polenta is very thick.

  2. Serve hot, or chill until firm and bake at 350 until top is browned.
