A staple from my grandmother's home in Northern Italy.

Recipe Ingredients for Polenta

2 cups corn meal (medium ground)
7 cups of water
1 tbsp salt

Recipe Directions for Polenta

  1. boil water in large copper pot

  2. when water is at a rolling boil, add the salt

  3. whisk in the cornmeal in a steady stream to prevent lumps

  4. stir with a wooden spoon for 30-45 minutes. Polenta is done when it pulls away from the sides of the pot.

  5. Dump out onto large plate or wooden board. Eat with blue or gorgonzola cheese or your choice of meat and vegetables.
