This recipe needs some work. Wasn't sweet like a cake, and I baked it for 1 hour until a toothpick came out clean, and it still wasn't firm inside.

Recipe Ingredients for Polenta Pumpkin Cake

24 ounce of pumpkin
1/4 cup sugar
2 cups polenta
3 T. cinnamon
1 T. cloves
1 T. nutmeg
2 eggs
4 egg whites
1/3 cup whole wheat flour
1/4 t. salt
1 t. baking soda

Recipe Directions for Polenta Pumpkin Cake

  1. Mix pumpkin, polenta, sugar and eggs in blender or food processor until well blended.

  2. Add remaining ingredients.

  3. Mix well.

  4. Pour into large greased baking dish.

  5. Bake for 45-60 minutes until toothpick inserted in center comes out clean.
