Recipe Ingredients for Polenta and Pine Nut Stuffed Peppers

2 cups water
1/2 tbsp salt
1 tsp black pepper
1 tbsp cumin
1 cup cornmeal
1/2 cup green onion, chopped
3/4 tsp oregano, dried
1/4 cup pine nuts
1 oz green chili 82693
200 g old cheddar cheese, grated 87411
2 red peppers

Recipe Directions for Polenta and Pine Nut Stuffed Peppers

  1. Mix cornmeal and water in pot and cook over medium high until water is dissolved. Remove from heat.

  2. Premix salt, pepper, cumin, oregano, green onion, pine nuts and chilis, then stir into cornmeal until mixed.

  3. Stir in 3/4 of the cheese until melted.

  4. Cut peppers in half lengthwise and remove seeds.

  5. Fill each pepper half with the cornmeal mix.

  6. Top with remaining cheese.

  7. Bake about 25 minutes at 350F until cheese bubbles and begins to brown.
