Polenta W/ Peppers and Onions Recipe

This is one of our family favorites. You can also use parmesan in place of the blue cheese.

Recipe Ingredients for Polenta w/ peppers and onions

1 oz. gorgonzola cheese
1 cup cornmeal, coarse
1 red bell pepper
1 orange bell pepper
1 yellow bell pepper
1 onion
1/2 tsp. salt
1 tbs. olive oil
1 tbs. butter

Recipe Directions for Polenta w/ peppers and onions

  1. Bring 3 cups water & 1/2 tsp. salt to a boil. Stir in the coarse-ground cornmeal (polenta). Bring to a simmer and cover, stirring frequently. Watch for spatters, they can really burn you! When it is thick and creamy looking, stir in the butter and set aside.

  2. Meanwhile, saute the peppers and onions (sliced) in 1 Tbs. olive oil over medium low heat, until they begin to carmelize.

  3. Serve over the polenta and sprinkle the cheese on top.
