This foolproof polenta is made in the microwave oven while the sauce simmers on the stove top. Using a wire whisk keeps the polenta from lumping.

Recipe Ingredients for Polenta with Mushroom Marinara Sauce

14 oz chicken broth
1/2 cup cornmeal
1/2 cup mozzarella cheese, preshredded
1 tbsp extra virgin olive oil
1 small yellow onion
2 cups (6 oz) mushrooms, presliced
1 tsp bottled minced garlic
14 oz spaghetti sauce, prepared
3 tbsp dry red wine (optional)
1/4 tsp dried red pepper flakes, hot
1 tbsp grated Parmesan cheese (optional)

Recipe Directions for Polenta with Mushroom Marinara Sauce

  1. Whisk together broth and cornmeal in a medium microwave-safe bowl. Cover with wax paper and cook at high power for 5 minutes. Whisk until smooth. Cover with waxed paper and continue cooking at high for 3 minutes. Whisk until smooth. Cover with waxed paper and continue cooking at high for 3-4 minutes or until polenta is very thick. Whisk in mozzarella cheese. Cover and let stand until serving time

  2. While polenta is cooking, heat oil in 10" skillet over medium-high heat. Chop onion and place in skillet. Add mushrooms and garlic and cook for 3 minutes, stirring occasionally. Add spaghetti sauce, wine and pepper flakes. Simmer uncovered over medium-low heat for 10 minutes, stirring occasionally.

  3. Spread polenta evenly over center of two dinner plates. Spoon sauce over polenta and sprinkle and Parmesan cheese

  4. Serve Suggestions: Serve with Caesar salad
