Polenta for use with a variety of things

Recipe Ingredients for Polenta made with water

1/2 c polenta
2 c water
1/4 c mascarpone cheese
2 tbs parmesan cheese
1 salt to taste
1 pepper to taste

Recipe Directions for Polenta made with water

Bring water to a boil and slowly stir in polenta, stirring constantly to avoid lumps. When thick add parmesan cheese and whisk until smooth. Add mascarpone and whisk until smooth. Serve as is or spread in loaf pan and refrigerate. Cut into squares, wedges or rounds, fry or heat through and serve.
