A lovely healthy way to have lasagna

Recipe Ingredients for Polenta Lasagna with creamy mushroom sauce

1 onion
16 oz mushrooms
2 cloves garlic
3/4 cup milk, 2%
2 tablespoons milk, 2%
2 tablespoons cornstarch
1/4 cup fat free cream cheese
1 oz white wine
3/4 tsp. salt
34 oz grits
1/4 tsp. black pepper
1/2 cup parmesan cheese

Recipe Directions for Polenta Lasagna with creamy mushroom sauce

  1. preheat oven to 375. cook onion in large nonstick skillet coated with cooking spray over medium high heat for three minutes, stirring often. Add all mushrooms and garlic; cook, stirring often, 3-4 minutes or until onion is tender. Add 3/4 cup milk, and bring to a simmer, stirring occasionally.

  2. mix cornstarch and remaining milk and stir into mushroom mixture. Add cream cheese and wine and cook, stirring often, 1-2 minutes, or until smooth and blended. Remove from heat. Add salt and pepper.

  3. coat a 10x10 baking dish with cooking spray. Spread three tablspoons of mushroom sauce in bottom of the dish. Layer 1/3 of the polenta slices over sauce. Sprinkle a 1/4 cup of parmesan cheese over polenta. Top with half of the remaining mushroom sauce. Top with a third of the remaining polenta slices and remaining sauce, top with the rest of the polenta.

  4. bake, uncovered, 35-40 minutes or until bubbly. Sprinkle lasagna with remaining 1/4 cup parmesan. Broil 3-5 minutes or until cheese is lighly browned. Remove fom heat. cover loosely with foil and let stand for 10 minutes before serving.
