Polenta with Italian Sausage Recipe

The original recipe called for homemade polenta. I used purchased polenta and squeezed it in a gallon size baggie to soften. Not quite as neat, but just as tasty.

Recipe Ingredients for Polenta with Italian Sausage

13 ounces polenta
1 pound turkey sausage
2 garlic cloves, minced
14 1/2 ounces stewed tomatoes
6 ounces tomato paste
1/4 cup shredded Parmesan cheese

Recipe Directions for Polenta with Italian Sausage

  1. Soften polenta by squeezing in a large baggie.

  2. Brown the sausage and garlic in a large skillet , then drain.

  3. Cool sausage slightly and cut into 1 inch pieces.

  4. Return sausage to the skillet.

  5. Add tomatoes and tomato paste and bring to a boil.

  6. Remove from heat.

  7. Spread half of the polenta in a serving dish.

  8. Top with half of the sausage.

  9. Repat layers.

  10. Sprinkle with parmesan cheese.

  11. Bake for 20 minutes.

  12. Put under the broiler for a few minutes if you want to brown the top.
