Recipe Ingredients for polenta crackers

1 1/2 c boiling water
3/4 c polenta meal or cornmeal
1 tsp mixed herbs
1/2 tsp salt
2 T soy margarine

Recipe Directions for polenta crackers

  1. Polenta Crackers

  2. 1 1/2 c boiling water

  3. 3/4 c polenta meal or cornmeal

  4. 1 tsp mixed herbs (for these, I used an onion and garlic seasoning blend)

  5. 1/2 tsp salt

  6. 2 T soy margarine

  7. Bring water to a boil. Add polenta and herbs, and cook until creamy. Remove from heat, and add salt and margarine. On a well-oiled cookie sheet, spread out batter until thin. Score into pieces with a sharp knife. Bake in a 350 degree oven 20-25 minutes, until crispy and brown. Cool and serve.
