Recipe Ingredients for Polenta chips

1 tsp olive oil
4 c water
1/5 c cornmeal
1 tsp salt
2 T butter
3 oz parmesan cheese, grated

Recipe Directions for Polenta chips

  1. Grease 13x9 inch baking dish w olive oil.

  2. Bring 2.5 c water to boil.

  3. While water is boiling, add corneal to 1.5 c cold water, stir well. Add salt.

  4. Slowly add cold cornmeal mixture to boiling water, whisking constantly to prevent lumps.

  5. Reduce heat and simmer, strirring constantly until cornmeal is soft and creamy, about 30 minutes.

  6. Add butter and stri until butter is incorporated.

  7. Stir in cheese.

  8. Pour mixture into greased pan. Spread evenly to depth of 1/2 to 3/4 inch. Let cool until set, about 30 minutes.

  9. Preheat over to 425 F.

  10. When cool, cut polenta into 3x1/2 inch triangles.

  11. Place on baking sheet covered with parchment paper.

  12. Bake 15-20 min or until lightly golden and crispy on the outside and soft on inside.

  13. Best when served immediately from oven.

  14. Grated cheddar, goat, gorgonzola may be used instead of parmesan.

  15. One serving is 30 chips.
