This is a fairly mild flavored soup, but it's deliciously good!

Recipe Ingredients for Poblano and Corn Soup

6 poblano pepper
3 1/2 cup Baby Gold & White Corn
2 cup skim milk
1 cup chopped onion
1 tbs water
3/4 tsp salt
1/2 cup low fat cheddar cheese

Recipe Directions for Poblano and Corn Soup

  1. Char skins of peppers and remove, leaving soft meat.

  2. Put 1 cup corn and 1.5 cups milk in dutch oven and brin to a boil over medium heat.

  3. Mix chilies, onion, and water in microwave, heat at HIGH 4 minutes.

  4. 2 cups remaining corn & milk into blender. Blend until smooth. Add to corn mix in pan.

  5. Stir in pepper mix and salt. Cook over medium heat 5-6 minutes. Serve up, topping with 2 tbs cheese.
