Recipe Ingredients for Poblano Corn Muffins

1 1/2 cups (1 package) Jiffy corn muffin mix
1 egg
1/2 cup milk
3/4 cup shredded reduced fat cheddar cheese
1/2 tsp salt
3 poblano peppers

Recipe Directions for Poblano Corn Muffins

  1. Preheat oven to 400 degrees (375 for convection ovens).

  2. Mix all ingredients together and spoon into the halved peppers. Bake for 18-22 minutes, until a toothpick inserted in the center of the largest muffin comes out clean.

  3. Serve on it's own or with jalapeno creme fraiche.
