Serving size is 1 cup. I use frozen corn and fire-roasted chilies.

Recipe Ingredients for Poblano Corn Chowder

1 large onion
2 cloves Garlic
1 red pepper
4 cups diced raw potatoes
2 cups water
2 tsp Vegetable Broth Powder
1 tsp cumin
1 tsp basil
1 tsp salt
1/4 tsp black pepper
4 oz green chiles
2 cups corn, sweet, yellow
4 tbsp soy milk powder

Recipe Directions for Poblano Corn Chowder

  1. Dice onion, garlic and sweet pepper, and steam saute in non-stick pot. Add potatoes, water and bullion powder. Bring to boil, then reduce heat and simmer until potatoes begin to soften.

  2. Add spices, chiles and corn. Cook until corn is thawed and potatoes are soft.

  3. Stir in powdered soy milk. Enjoy!
