My recipe, combining Julia Chiles classic proportions with Mark Bittman's cheese quiche volume.

Recipe Ingredients for Poblano Cheddar Crustless Quiche

1/2 cup heavy cream
1/4 cup skim milk
3 large eggs
1 cup cheddar cheese
2 green peppers

Recipe Directions for Poblano Cheddar Crustless Quiche

  1. Roast poblanos over gas burner or broil in oven.

  2. Peel.

  3. Chop into strips 1/4 wide by 2 inches long.

  4. Grate 1 cup colby jack cheese.

  5. Lightly butter or oil a 9 inch pie pan.

  6. Add 1/2 of cheese to bottom of pan.

  7. Layer pepper atop cheese evenly.

  8. Add remaining 1/2 of cheese.

  9. Add dash of sea salt.

  10. Beat together 3 eggs and 3/4 of a cup of cream and/or milk.

  11. Pour over ingredients.

  12. Place in 375º oven.

  13. Bake for 30-40 minutes or until puffed and browned.
