Recipe Ingredients for Poached Salmon with Steamed Vegetables

1 cup water
2 tbsp celery with leaves, chopped
1 tbsp chopped onion
1 pinch fresh parsley, chopped
6 oz. Atlantic Salmon Skinless Boneless Fillets
1 cup broccoli florets
1/4 cup carrots, sliced thin
1/2 cup cauliflower florets
1 tbsp low-fat sour cream
1 tbsp low-fat mayonnaise
2 tbsp chopped cucumbers
1 pinch dried dill
1/4 cup brown rice

Recipe Directions for Poached Salmon with Steamed Vegetables

In a small saucepan, add water, celery, onion and parsley. Bring to a boil for 8 minutes. Add salmon fillet and return to a boil. Reduce heat, cover and simmer for 10 minutes, or until fish flakes easily with a fork. Meanwhile, steam broccoli, carrots and cauliflower. Remove salmon when it is done with a slotted spoon and drain. In a bowl, combine low-fat sour cream, mayonnaise, cucumbers, and dill. Serve salmon fillet topped with sour cream-cucumber mixture, steamed vegetables and hot cooked brown rice. Makes 1 serving.
