Recipe Ingredients for Poached Salmon for One

1/2 cup fish stock
1/2 cup water
2 tbsp. lemon juice
1 tbsp. fresh dill weed or 2 tsp. dried
1/2 stalk celery, chopped
1/2 onion, sliced
4 oz. salmon fillets, about 1/2" thick

Recipe Directions for Poached Salmon for One

  1. PREPARATION:

  2. In large heavy skillet, combine wine, water, peppercorns, dill, celery, lemon, and onion. Bring to a boil, then cover, reduce heat, and simmer for 10 minutes to blend flavors. Add salmon to the skillet, cover, and simmer for 8-10 minutes until the fish flakes easily.
