16 oz haddock filet , cut into 1 1/2" pieces
2 cups chicken broth
1 tbsp minced ginger
3 cloves garlic, minced
1 cup chopped scallion
4 cups finely shredded chinese cabbage
1 medium tomato, chopped
1 tbsp dried mint
2 tbsp lime juice
2 cups bean sprouts, mung

  1. heat 1/4 c broth, add ginger and haddock; cook 2 minutes, stirring frequently

  2. add rest of broth, simmer 3 minutes

  3. add rest of ingredients, simmer 3 minutes
