16 oz Asparagus
4 large Egg, Whole
1 dash Pepper, Black

Recipe Directions for Poached Eggs With Asparagus

  1. Ingredients:

  2. ? 1 pound medium thickness asparagus

  3. ? 4 large eggs

  4. ? Freshly ground black pepper

  5. Preparation:

  6. Trim woody ends off asparagus.

  7. Boil or steam asparagus for 4-5 minutes, until crisp yet tender.

  8. Drain and distribute among four plates.

  9. While asparagus is cooking, heat 2 inches of water to a simmer in a large skillet.

  10. Break eggs into separate shallow bowls or saucers.

  11. Carefully tip eggs into simmering water. Cover and turn off heat.

  12. Leave eggs to cook in hot water for 4-5 minutes (for soft yolks).

  13. Remove eggs carefully with a slotted spoon, allowing excess water to drain, and place one egg on top of each plate of asparagus.

  14. Season with black pepper and serve immediately.
