Low calorie alternative to bacon and egg. For breakfast or light lunch

Recipe Ingredients for poached egg, bacon and salad.

1 Rasher Bacon
1 large Egg, Whole
5 ea. Raw Tomato Cherry
1 Serving Mixed Leaf Medley Salad
2 grams Vegetable Oil, Canola

Recipe Directions for poached egg, bacon and salad.

  1. Brush a non stick pan with vegetable oil.

  2. Trim the fat off the bacon, fry on one side then turn over and dry fry the other side.

  3. Half the cherry tomatoes and add to the pan and cook until just turning soft.

  4. Meanwhile poach the egg.

  5. When cooked, take a serving of salad leaves and place on plate.

  6. Lay bacon, egg and tomatoes on top.

  7. Enjoy.
