Recipe Ingredients for Poached Chicken With Red Pepper Sauce

3 unit+yield+from+1+lb+ready-to-cook+chicken chicken breasts
1 1/2 T margarine
3/4 cup white wine
1 cup cream (parve)
1 T olive oil
12 red bell pepper
1 dash salt and pepper

Recipe Directions for Poached Chicken With Red Pepper Sauce

  1. Halve each chicken breast and trim away any fat. Use the margarine to grease a large skillet and a piece of parchment paper or foil cut to fit the skillet exactly. Put the chicken in the pan, pour around the wine, and press the greased paper or foil onto it. Cover with the lid and bring to a boil.

  2. Lower the heat so the liquid barely bubbles, and cook 8 minutes or until the chicken is opaque and firm to the touch. Transfer to a plate, reserving the cooking liquid; cover and keep warm.

  3. boil the cooking liquid until it is reduced to a thin film in the skillet. Pour in the cream, return to a boil, and let it bubble gently for 5 minutes. Set aside.

  4. Heat the olive oil in another skillet and cook the pepper for a few minutes over a high heat. Pour in the cream mixture and stir thoroughly. Add salt and pepper to taste. arrange the chicken breast on a platter like the spokes of a wheel. Spoon some sauce over each one and serve at once with rice pilaf.
