This is a typical Colombian dish. Sweet plantains are best baked. They're even better with cheese and guava

Recipe Ingredients for Plátano Maduro con Queso y guayaba (plantain with cheese and guava)

1 medium raw yellow plantain (must be very ripe and soft to the touch)
1 tablespoon guava paste
1 ounce mozzarela cheese (1 slice)
1/2 tablespoon butter

Recipe Directions for Plátano Maduro con Queso y guayaba (plantain with cheese and guava)

  1. Preheat oven to 400 degrees

  2. Peel plantain and cut a slit in the middle of the plantain, taking care to not split it.

  3. Cut the slice of mozzarella in half and place each half in the middle of the plantain.

  4. Place guava on top of the mozzarella.

  5. Bake for about 20 minutes or until mozzarella is completely melted and golden on top.
