Thai-style vegetarian curry with sweet potatoes, plantains and eggplant.

Recipe Ingredients for Plantain and Sweet Potato Curry

7 serving Goya Coconut Milk
2 cup, cubes Yam
1 medium Plantains
1 onion Yellow Onion
1 cloves, raw Garlic
3 slices (1" dia) Ginger Root
2 spray , about 1/3 second (1 NLEA serving) Original Cooking Spray
0.5 1tsp Oil, Sesame
0.25 pepper Peppers, Jalapeno
0.33 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
0.5 cup, chopped Broccoli
1 oz Naturally Brewed Soy Sauce
0.25 tsp Chinese Five Spice Blend Grinder
0.13 tsp Spices Ground Coriander
0.13 tsp Nutmeg, Ground
0.1 oz Ground Cumin
1 fruit yields Orange Juice
1 Glass Water

Recipe Directions for Plantain and Sweet Potato Curry

  1. Cube sweet potatoes, and eggplant. Slice plantains, ginger, and jalepeņo. Mince garlic. Chop onions and broccoli.

  2. Spray pan with Pam cooking spray and drizzle sesame oil.

  3. Add jalepeņo, ginger and plantains to hot skillet. Let the plantains brown slightly.

  4. Add onions and saute. Add garlic.

  5. Gradually add the rest of the vegetables starting with sweet potatoes, then eggplant, and broccoli.

  6. Add coconut milk, spices, the fresh squeezed orange juice, and soy sauce.

  7. Bring to a boil. If more liquid is needed to submerge sweet potatoes, add water. Keep at a rolling boil for 10-15 minutes, and then turn down to simmer. Continue cooking until sweet potatoes are as soft as desired.

  8. Serve over rice. Serves 2-4.
