This recipe is from Plan-D:The Amazing Anti-Diet, by Dee McCaffrey. Her original recipe says this will make 12 servings, but I made 30 muffins out of the mix, so that's what these calorie stats are based upon. Please note: even though calorie-count.com says this food gets a C- grade, the ingredients are full of beneficial fiber and nutrients, the agave syrup and banana are blood glucose levelers (unlike refined sugar) and the carbs from the wheat and spelt flours are slow-burning ones.

Recipe Ingredients for Plan-D Zucchini Muffins (or bread)

2 cups wheat flour
1 cup spelt flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tbsp cinnamon
2 eggs
1/2 cup butter, softened
1 tbsp applesauce, unsweetened
1 banana
1 cup agave syrup
1 tsp vanilla extract
1 tsp almond extract
2 cups zucchini, shredded

Recipe Directions for Plan-D Zucchini Muffins (or bread)

  1. Preheat oven to 350 degrees.

  2. Shred zucchini. (You could use a food processor with the shredding insert, or a mandolin.) Set aside.

  3. Combine wet ingredients. (I used my food processor with the chopping blade insert. You could do it by hand, too.)

  4. Combine dry ingredients. (I used a mason jar, because it has cup measurements formed on the glass; after I put in all of the dry stuff, I put the lid on the jar and shook it up.)

  5. Pour mixed dry ingredients into a big bowl, then pour wet mixture into the bowl on top of the dry stuff. Stir until bowl?s contents are thoroughly mixed. Stir in the zucchini.

  6. Pour all mixed ingredients into your bread pan, or if you?re using a muffin tin, fill each cup a little more than halfway full.

  7. Bake bread for 50-60 minutes, muffins for 20-30 minutes; you'll know it's done when you can stick a butter knife into the bread and pull it out clean. Cool on a bread rack. Eat with honey butter and say YUM a lot.
