Lentil soup flavored with a garlic, onion, and tomato base.

Recipe Ingredients for Plain Mexican Lentil Soup

500 g lentil
1 cup diced onion
210 g tomato puree
2 tbsp minced garlic
2 tbsp olive oil
4 tbsp chicken bouillion

Recipe Directions for Plain Mexican Lentil Soup

  1. clean, rinse and drain lentils.

  2. dice about 1 cup worth of onion finely.

  3. In a large pot (wider than it is deep) boil 2 qts water and add 4 tbsp bouillion empty into another container.

  4. In the same pot heat up the olive oil then add the garlic and onions to make a sweat. 6-7 minutes on low heat until onions are translucent stir occasionally.

  5. Add tomato puree and and heat for a few minutes.

  6. Empty the pots contents into the blender and blend until desired consistency

  7. Blend some of the "chicken stock" into the sauce.

  8. Pour tomato chicken stock mix into the same pot and raise to a boil. Put in lentils and boil for about 6 minutes.

  9. Set to heat for very lightly boiling and wait until lentils are cooked. (about 45 min- 1.5 hours).

  10. Add salt to taste.

  11. Serving size 1 cup.
