Spicy Thai Fish soup that warms your bones in the winter when served hot, or even a cold spicy treat in the summer. It's actually really healthy for you and kick-starts your fat burning metabolism, too. I've discovered I lost weight eating it regularly in my diet.

Recipe Ingredients for PJ's Spicy Thai Fish Soup

1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
2 cup, chopped Onions, Spring Or Scallions
1 cup, diced Celery
3 tsp Garlic
8 serving Cooking Stock
8 oz Mushrooms, Portabella
8 oz Kale
2 fruit (2" dia) Limes
20 oz Organic Lite
0.33 cup Lime Juice
3.527 oz Snow Peas
3 fillet Cod, Atlantic
30 large Shrimp, Mixed Species
5 tbsp Fish Sauce
0.5 cup Coriander Leaves
2 tbsp Ginger, Ground
1 tbsp Pepper, Red Or Cayenne
1 tbsp Turmeric, Ground
0.5 oz Safflower Seed Kernels, Dried
1 tbsp Olive Oil
1 tbsp Pepper, Black

Recipe Directions for PJ's Spicy Thai Fish Soup

  1. In a large pot, heat up olive oil and simmer garlic, green onions, celery, bell pepper, snow peas and BABY portabella mushrooms until tender.

  2. Scrape Lime zest off with a grater into pot, and juice limes with juicer to add.

  3. Add Kale and stir.

  4. Add lite coconut milk, lime juice, fish sauce, and spices (cilantro, ginger, black and cayenne pepper, turmeric and safflower).

  5. Add fish and shrimp in last 7 minutes, cook and serve it up!

  6. About 45 mins Makes a large amount about 20 servings.
