2.75 lbs Fresh Green Beans 2 Tbs Olive Oil 3 Large Onions chopped 1/2 lb Ham diced 6 strips Turkey Bacon diced 6 cloves Garlic chopped 12 cups Chicken or Vegetable Broth 1 28oz/794g Can Hunts Petite Diced Tomatoes 2 Tsp Salt 6 Red Potatoes cut up

Recipe Ingredients for PJ's Snap Bean Soup

1225 grams Beans, Snap, Green
3 medium (2-1/2" dia) Onions
2 serving VIGO EXTRA VIRGIN OLIVE OIL
6 clove Garlic
6 serving Turkey Bacon
5 tsp Chicken Base
12 cup (8 fl oz) Water
28 oz 100% Natural Petite Diced Tomatoes
6 potato medium (2-1/4" to 3-1/4" dia) Potatoes, Red, Flesh And Skin

Recipe Directions for PJ's Snap Bean Soup

  1. Heat oil in Large Soup Pot.

  2. Add Turkey Bacon & Ham.

  3. Cook 'til halfway done, then add Onion & Garlic & stir & cook til onion is soft.

  4. Make Broth by heating water and base in microwave until very hot.

  5. Pour broth into pot and bring to a boil then add Green Beans & stir.

  6. Cook on a med. setting until beans are limp. Add Tomatoes & Potatoes & simmer for as long as it takes for beans to be tender and potatoes to be fork tender. Add other seasonings if preferred (pepper or paprika for ex.)

  7. This tastes even better the second day.
