10 cups fresh green beans 2 LG tomatoes 4slices bacon 1 LG onion 2 tsp Chicken base 2.5 cups water Salt

Recipe Ingredients for PJ's Green Beans & Tomato Soup

10 cups (125 g) Beans, Snap, Green
2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 large Onions
4 slices COOKED Center Cut Bacon
2 tsp Superior Touch Chicken Base
1200 grams Potatoes, Boiled
1 tsp Salt, Table

Recipe Directions for PJ's Green Beans & Tomato Soup

  1. Clean & snap beans & rinse.

  2. Slice up 4 strips bacon & chop 1 lg. onion.

  3. Saute bacon in bottom of pot 2 min. then add onions and cook until transluscent. Make chicken broth with base & 2.5 cups water & add to pot. Add beans when water boils & salt to taste.

  4. Stir.

  5. Cook on low heat until bean are almost done.

  6. Chop two tomatoes & add to top of beans.

  7. Peel & cut up into 1in cubes 4 potatoes or use small new potatoes whole & add to pot. Stir gently so potatoes go into liquid. May have to add more water at this time. Beans don't have to be covered though.

  8. Cook low and slow to break down cellulose and so tomatoes don't overcook. Tastes best after a day in fridge.
