Pizza with a rice base crust. Very filling and thick. One piece is an ample portion. Serve with salad or light soup for a complete meal.

Recipe Ingredients for Pizza Riso

1 cup carrots, grated
2 1/2 cups brown rice, cooked
1/3 cup whole wheat flour
1/2 cup low fat cottage cheese
2 tablespoons onion, minced
1/2 teaspoon basil
3/4 cup tomato sauce, no sugar
1 1/2 cups shredded mozzarella cheese, low fat
1/2 teaspoon basil

Recipe Directions for Pizza Riso

  1. To make crust: Place carrots in a strainer and weight with an unopened can of veggies. Let drain for 20 min. Pat dry.

  2. Combine carrots with rice, flour, cottage cheese, onions, and 1/2 t. basil.

  3. Coat a 9 X 13-inch pan with no-stick spray, pour in crust mixture, and spread it to cover bottom and about 1/4 inch up sides of pan. Bake on the middle oven rack at 350 degrees for 25 min. After baking, place under broiler to seal crust. Let the crust brown without burning the carrots. No need to cool before topping.

  4. To assemble: Spread tomato sauce over the crust and top with cheese. Sprinkle the basil over the cheese and bake at 350 degrees for 20 to 25 min. or until cheese is brown and bubbly.
