Hearty veggie and turkey pepperoni pizza with a puffy crust

Recipe Ingredients for Pizza

3/4 c whole wheat flour
2 1/4 c bread flour
1 1/2 t salt
1 pkg yeast
1 T sugar
1 1/4 c warm water
1 T olive oil
1 c tomato sauce
12 oz mozzarella cheese, part skim low moisture
4 oz feta cheese
2 oz turkey pepperoni
8 mushrooms, chopped
1/3 large green pepper, thinly sliced
16 kalamata olives, coarsely chopped
5 artichoke hearts, marinated, chopped

Recipe Directions for Pizza

  1. Dissolve sugar and yeast in the warm water, which should be 100-110 F. Let stand for 10 minutes until foamy.

  2. Stir in the whole wheat flour and 1/4 c of the bread flour, followed by the oil and salt. If desired, chopped herbs can also be added at this point, like rosemary, dried basil, etc.

  3. Stir in another cup of bread flour, and then gradually add the last cup, turning out to knead on a floured surface once the dough becomes too stiff to stir. Knead in the rest of the flour (3-5 minutes). Dough will be smooth, elastic, and a bit sticky. Oil a clean dry bowl, place the dough in, cover with greased foil or a clean damp towel, and let rise until about double, about an hour. Alternately, prepare several hours ahead of time and let rise in the refrigerator for 3-4 hours. The second rising will also take a bit longer if the dough is chilled though, so keep it in mind.

  4. In the meantime, chop your topping ingredients and set aside. Shred the mozzarella and crumble the feta. Grease a cookie sheet with sides, or prepare a large pizza stone.

  5. Dip your fist in some flour and punch down the risen dough before turning out again onto a floured surface. Roll dough to the size of the pan, place it in, press dough into corners and try to raise the edges a bit for a crust. Cover loosely with the greased foil. Let rise again for about 25 minutes. Preheat oven to 425.

  6. Pre-bake the risen crust (uncovered) for 5 minutes before adding toppings. It will puff up quite a bit. Remove from oven, add sauce, toppings, and cheese. Return to oven and bake for another 15-20 minutes until cheese is golden and bubbly, and crust is golden brown. Let cool for 5 minutes or so before cutting with pizza cutter.
