Recipe Ingredients for Pizza Margherita (King Arthur's White Whole Wheat)

2 tbsp Natural Pure Raw Honey
1 tbsp Vital Wheat Gluten
6 tsp Extra Virgin Olive Oil from Tuscany
1 1/2 tsp Salt, Table
2 tbsp Sesame Seeds
2 tbsp Olive Oil
4 medium raw Plum Tomato
2 cup, shredded Mozzarella, Part Skim Milk, Low Moisture Cheese
15 leaves Basil, Fresh
1 tsp Salt, Table
3 1/2 cups White Whole Wheat Flour

Recipe Directions for Pizza Margherita (King Arthur's White Whole Wheat)

  1. Dough:

  2. Preheat oven to 425.

  3. Stir together yeast, water, honey, and 1 cup of the flour. Cover the mixture and let it stand for 30 min; it'll be very soupy.

  4. Add the 2 cups of the remaining flour, the vital wheat gluten, olive oil, sesame seeds, and the salt to the yeast mixture.

  5. Mix and knead the dough by hand for about 5 min, adding more flour as necessary to make a smooth elastic dough.

  6. Place it in a lightly greased bowl, cover the bowl tightly with plastic wrap, and allow the dough to rise for at least 2 hours, or until it's doubled in size.

  7. Assembling the pizza:

  8. Divide the dough in half, roll each piece on a floured surface into a 13" - 15" round, and place the rounds on lightly oiled pans. Turn in the overhanging edge to form a rim. If you plan to use a baking stone, place the dough on 2 baker's peels, dusted w/ cornmeal or surfaced w/ parchment.

  9. Brush each round w/ 1 TB olive oil. Top w/ tomato slices, cheese, basil leaves, sprinkled w/ salt and the remaining 1 TB of oil (or spray w/ olive oil)

  10. Bake the pizzas in the pans for 20-30 min, or until the top and bottom crusts are nicely browned.

  11. If using stones, bake for 15-25 min.

  12. Cut into wedges and serve immediately, garnished w/ additional fresh basil if desired.

  13. Yield: 2 pizzas, about a dozen large slices.
