Like a pizza, but with eggs as the base, for breakfast! Also a great way to use up pre-cooked veggies.

Recipe Ingredients for Pizza Frittata

40 grams green bell pepper, diced
2 oz sliced mushrooms
40 grams red onion, diced
1 tsp basil
1 tsp oregano
1 tsp black pepper
3 eggs
1/2 cup pasta sauce
1/8 cup grated Parmesan cheese

Recipe Directions for Pizza Frittata

  1. Scramble eggs in the base of a large frying pan. Allow to coat bottom of pan. Cover and let cook for 2 minutes.

  2. Pour vegetables over eggs and spread out.

  3. Cover with sauce and Parmesan cheese.

  4. Cover and let cook for 2 minutes.

  5. Carefully slide a rubber spatula around the circumference of the eggs, then down to the middle of the pan.

  6. As quickly as you can, flip one half of the eggs onto the other.

  7. Cut in half cross-wise and serve immediately.

  8. Can also be used in a breakfast sandwich!
