Makes 12 servings



Thin pizza dough 8 oz or less for single dinner serving; add 4 oz mozzarella, little tomato sauce and only veggies (mushrooms, onion, olives, aspargus, etc) In hot (450 degrees) oven for 15 minutes. Use on parchment paper on pizza stone best result, clean

Recipe Ingredients for Pizza dough

12 cup flour
1/4 cup dry yeast
1/4 cup sugar
4 oz olive oil
3 ounce salt
8 cup water

Recipe Directions for Pizza dough

  1. Add salt to flour, mix in.

  2. In mixing bowl (machine with paddle) put sugar (stir) and then yeast (stir) in warm water (115 degrees or less) for 15/20 minutes.

  3. Turn machine on to med/low add oil, then flour, +/- cup at time, waiting to be completely blended in before next cup until all flour in incorporated. If mixture not incorporating add little water towards end of flour.

  4. Switch paddle for dough hook and run on low for hour.

  5. Put into large stainless, oiled bowl, covered with damp towel in warm location (gas oven with poilt light good for 1 hour, should rise close to double size.

  6. Turn out of bowl onto flat counter top well dusted with flour and knead a few minutes to reduce air; roll slightly into a "log" shape; keeping it dusted with flour to prevent sticking.

  7. Scale out 8 oz (I use 7oz) portions onto piece of plastic wrap, cover up and put into plastic bags for freezing; should get 10 portions or so. Okay to freeze and use whenever.

  8. Let thaw complete and after sit to "proof" before using. In this order, roll out dough into 12" circle, brush little olive oil to seal, add sauce, then cheese and what ever toppings you like but be careful with to "watery" veggies (thick slices tomatoes, too much white mushrooms, etc)
