Wheat and Rye Pizza Dough to top with whatever you want! This recipe makes 4 slices of medium size. You can serve it thick crust or roll thinner for a very nice, crispy thin crust. Works well either way. You can substitute the rye flour with wheat or all of it for white flour. Special Items Needed: Plastic Wrap, Parchment Paper, Rolling Pin (optional), Pizza Stone (NOT optional--Picked one up for $10 new), Spiked Pastry Roller (Optional)

Recipe Ingredients for Pizza Dough

1/2 cup water
1 tsp instant yeast
1/4 cup rye flour
1 cup wheat flour
1 tsp salt
1 tbsp olive oil (approx.)

Recipe Directions for Pizza Dough

  1. In a medium bowl, dissolve the instant yeast in the water.

  2. Add the rye flour and 1/4 cup of the wheat flour.

  3. Combine until smooth then let sit until bubbly (about half an hour or more if you want).

  4. Next, add remaining wheat flour, salt, and 1 good glug (about a tbsp) of olive oil. This will seem dry but it's dough so it's ok.

  5. Put a few drops of olive oil on your hands to keep the dough from sticking and mix it with your hands then form into a ball.

  6. Wrap dough ball loosely in plastic wrap and let sit in a warm place (on top of stove while oven heats is a good) until approximately double in size (check in about 2 hours).

  7. **ONE HOUR BEFORE BAKING: Place COOLED baking stone in oven and preheat at 500F. Any less time will not evenly heat the stone.

  8. Once dough is ready, flip a cookie sheet and place a square of parchment paper on top.

  9. Put a few drops of olive oil on your rolling pin to help keep from sticking, again. Roll out dough, starting at center first, to desired thickness. If you have a spiked roller, make a few runs over the dough to help reduce the chance of air pockets.

  10. Top with whatever ingredients you want!

  11. Cook until browned and cheese is gooey and perfect; 10 minutes usually does it for me.

  12. Let pizza cool off of stone for about 5 minutes before you cut and serve.
