This must be made a day before, and can be kept up to 3 in the fridge, or 3 months in the freezer.

Recipe Ingredients for Pizza Dough (peter Reihnhart)

5 c flour
1 1/4 c water
1 t yeast
1 t salt

Recipe Directions for Pizza Dough (peter Reihnhart)

  1. Miz together well, knead in a standmixer until slightly sticky, and pulls away from the sides but not the bottom.

  2. Divide in 6, shape into balls, and place on well oiled parchment covered baking sheet. Cover dough with oil and cover in plastic wrap or food grade bag.

  3. Rest in Fridge overnight.

  4. 2 hours prior to baking remove from fridge and flatten dough. Let rise 2 hours.

  5. 45 min before baking preheat over and pizza stone to hottest oven will get.

  6. Shape dough with knuckles (tossing) or with rolling pin. Top as desired, and bake approx 10 min, keep an eye on it!
