Makes 8 servings



Whole wheat pizza crust for bread maker or by hand. It actually uses barley malt, not barley flour, but I can't find barley malt on the food list.

Recipe Ingredients for Pizza Crust - Whole Wheat

3/4 c. warm water (add more if needed)
1 tsp. barley flour
1 tsp. yeast
2 1/4 c. whole wheat pastry flour
1/8 tsp. salt
1 T. olive oil

Recipe Directions for Pizza Crust - Whole Wheat

  1. Place water, oil and salt in bread maker. Add flour, barley malt and yeast. Set bread maker to "pizza dough" or "dough only" setting for 1 lb.

  2. Dust kneading area with flour and knead a little to firm up the dough. Spread a little cornmeal on the board, then flatten dough into a 12 inch circle (or whatever shape fits your pan).

  3. Cover with the toppings of your choice. Place on pizza stone or pan. Put into cold oven, then shut the door and turn to 500 degrees.

  4. Cook for 17 minutes (It will take just about that amount of time for the oven to heat up). Remove, cut into 8 pieces and serve.
