Makes 2 thin 12" pizza crusts, 1 Chicago style deep dish crust, 6 single serve crusts, or 2 calzones.

Recipe Ingredients for Pizza Crust

4 1/2 cup unbleached all purpose flour
2 packages active dry yeast (4.5 tsp)
2 tsp light brown sugar
1 1/2 cups warm water
1 tsp salt
3 T olive oil

Recipe Directions for Pizza Crust

  1. Dissolve brown sugar into .5 cup warm water. Add the yeast and stir until dissolved. Let sit at least five minutes. The yeast should froth during this stage.

  2. Sift into a large mixing bowl 4 cups of flour and salt. Make a well in the center and add the oil and 1 cup of warm water. When the yeast mixture as sat for 5 minutes add it as well. Combine all the ingredients with your hands.

  3. Scoop dough onto a floured surface and knead for 8-10 minutes. Add the remaining flour as needed. The dough should be elastic and slightly sticky.

  4. Rub a large clean bowl with olive oil. Place the dough ball into the bowl and rub the top with olive oil. Cover the bowl with a try clean towel and place in a warm draft-free area. Let rise for 1.5 hours.

  5. Approximately 1 hour into the rising time preheat the oven to 500 degrees. If using stone it must heat in oven for at least a half hour prior to placing crust on it.

  6. After the dough has risen punch it down and divide into two balls. Roll the dough with a rolling pin on a floured surface. The circle should be slightly larger than the pan, about 14". Carefully transfer to a baking peel that has been sprinkled heavily with corn meal.

  7. Fold the edges of the crust in 1/2 inch and brush with olive oil. Top the crust with desired toppings.

  8. Slide the crust onto a heated baking stone in oven sprinkled with corn meal. Bake 10 minutes.
