For a light lunch. Mmm. Good. Make one, and it's enough for two people.

Recipe Ingredients for Pita Pizza with White Cheeses and Tomatoes

1 pita bread
2 medium tomatoes, sliced
1 tablespoon olive oil
3 tablespoons parmesan cheese
3 tablespoons feta cheese

Recipe Directions for Pita Pizza with White Cheeses and Tomatoes

  1. Turn oven onto broil.

  2. Place pita on cookie sheet.

  3. Slice tomatoes and toss the slices with olive oil (and salt, pepper, oregano, basil to season).

  4. Lay tomato slices flat onto pita bread.

  5. Sprinkle feta cheese and mozzarella over top.

  6. Place under broiler for 5-8 minutes until cheese has browned and edges of pita are dark brown.

  7. Cut into 4ths, and split with a friend.
