Small mushroom/onion/cheese quiches with four cheeses. Serving size is one mini quiche

Recipe Ingredients for Pita Mini-Quiches

6 oz whole wheat pitas, 3 whole
300 g portobello mushrooms
200 g chopped onions
2 oz feta cheese
2 oz reduced-fat mozzarella cheese
20 g Dried Tomatoes
4 oz nonfat ricotta cheese
1 tsp olive oil
1 1/2 c egg beaters

Recipe Directions for Pita Mini-Quiches

  1. Brown onion in olive oil until golden

  2. Add mushrooms and cook until mushrooms shrink and excess liquid is gone

  3. In separate bowl, mix cheeses, egg substitute and tomatoes.

  4. Split each pita into half (two rounds!) by cutting around the edge.

  5. Press each pita half into a pot pie size tin that has been sprayed lightly with non-stick spray.

  6. Into each "crust" place about 1/3 c egg mixture and 1/3 c mushroom mixture.

  7. Stir each just a bit with a fork to incorporate the mushrooms into the eggs mix.

  8. Bake at 350 degrees for about 40 minutes or until set.
