You can make your own pita bread at home. I make this recipe partially in my breadmaker on "dough" setting. They freeze very well, and are excellent as a substitute for a pizza dough

Recipe Ingredients for Pita bread

1 tbsp yeast
1/4 tsp sugar
1 1/2 cups water
2 tbsp olive oil
1 1/2 tsp salt
3 1/2 cups unbleached flour

Recipe Directions for Pita bread

  1. In breadmaker - put wet ingredients first, then dry, yeast should be put last

  2. Select the "dough" setting and let it mix the dough

  3. When dough is done, invert it on a lightly floured wooden board and divide in half. One half should be covered with plastic wrap

  4. The other half should be divided into 5 equal pieces and form each piece into a ball

  5. Let it rest for 10 minutes, while dividing the other dough portion

  6. Roll each ball into a 6 inch round and drape each round onto your rolling pin that you lightly floured

  7. Transfer each round onto lightly floured kitchen towels, and when all are transferred cover them with another set of kitchen towels and let them rise for 15 minutes

  8. Warm up the oven to 450F and preheat a lightly oiled baking sheet for 6 minutes in the oven

  9. Transfer 3 or 4 dough rounds to the hot sheet and place onto a baking stone in the oven (bottom rack)

  10. Do not open the oven doors for the first 3 minutes

  11. Bake until puffed and light brown, 6-7 minutes

  12. Stack the pitas onto a plate and cover with a kitchen towel
