Recipe Ingredients for Pita Bread

1 cup Gold Medal Whole Wheat Flour
2 cup Gold Medal All Purpose Flour
3 tsp Sugars, Granulated
1 tsp Salt, Table
1.5 tbsp Leavening agents, yeast, baker's, active dry
2 tbsp Butter
1.25 cup (8 fl oz) Water

Recipe Directions for Pita Bread

  1. In stand mixer, combine dry ingredients. Add wet ingredients. Knead on low-speed with dough hook until dough is smooth, soft, and elastic. It will be slightly tacky.

  2. Place dough in oiled bowl. Cover with plastic wrap. Let rise in warm location for 1 to 1 1/2 hours, until doubled in bulk.

  3. Punch down dough. Divide into 8 pieces and form into smooth balls. Let rest, covered, for 20 minutes.

  4. Roll out each ball to an 8-inch round. Bake on a pre-heated stone in a 450-degree oven for about 3 minutes, or until they puff.
