Nothing much beats this flatbread straight out of the oven... Serving size is 1/2 loaf.

Recipe Ingredients for Pita Bread

1 1/2 cups white flour
2 cups whole wheat flour
1 tsp salt
1 1/2 tsps yeast
1 1/2 tsps sugar
1 1/2 cups warm water
3 tbl olive oil

Recipe Directions for Pita Bread

  1. Put 1/4 cup of the water in a small bowl. Sprinkle the yeast and sugar over the water and set aside for 5 minutes. The yeast should foam up. Whisk lightly to fully combine.

  2. In a large mixer bowl, stir together the flour and salt. Add the remaining warm water, oil, and the yeast mixture. Mix on lowest setting until fully combine.

  3. Turn out on a floured surface and knead until dough is smooth and elastic, about 5 - 8 minutes. Place in a large lightly-oiled bowl, cover with plastic wrap, and allow to rise in a warm place for 1 1/4 hours or until doubled in bulk.

  4. Turn the risen dough out onto the floured surface again and divide into twelve pieces. Form each piece into a ball and roll each ball into a disc approximately 6" in diameter. Allow to rest, lightly covered with plastic wrap, for 20 minutes.

  5. Meanwhile, heat oven to 500 degrees F. Place the racks low enough so the top one is in the middle of the even. Place a stoneware pan or pizza stone on the rack and allow to heat complete, about 20 minutes.

  6. Working in batches of three or four, place the risen dough circles on the heated pan and bake 3 - 5 minutes, or until puffed and lightly brown. Move quickly to take the baked ones out and drop the next batch onto the pan. Stack the baked ones on top of each other to allow their own weight and gravity to slowly release the steam from the middles - pressing down on them even with an oven mitt is a good way to burn your hands.

  7. Serve warm or cool and cut in half to use as pocket pitas.
