Middle Eastern flatbread made with whole wheat flour

Recipe Ingredients for Pita Bread

1 1/2 cups water, warm
7 g yeast (1 packet)
1 tsp sugar
3 cups whole wheat pastry flour
1 1/4 tsp salt

Recipe Directions for Pita Bread

  1. Dissolve yeast in 1/2 cup of warm water

  2. Add sugar and stir to dissolve

  3. Let stand for 10-15 minutes until the mixture becomes frothy

  4. Meanwhile, combine salt and flour in a separate bowl

  5. Make a depression in the flour and pour in the yeast mixture

  6. While stirring, slowly add the remaining 1 cup of warm water

  7. Stir with a wooden spoon until the mixture forms a dough

  8. Flour a clean, flat working surface and your hands

  9. Knead the dough for 10-15 minutes, until it becomes elastic

  10. Coat a large bowl with oil and place the kneaded dough in the bowl, turning the dough to coat in olive oil

  11. Cover bowl with a warm, damp cloth and put in a warm place to rise until it is doubled in bulk, about 1 to 1 1/2 hours

  12. Flour your working surface, and roll out the dough into a thick rope

  13. Cut the rope into 8-10 pieces and roll out the balls of dough into flat circles 5-6" across and about 1/4" thick

  14. Preheat oven to 500 degrees and place the rack at the bottom of an oven

  15. Coat the bottom of a glass baking dish in olive oil and place in the oven for a few minutes to heat up

  16. Place two circles of dough in the baking pan and cook for 4 minutes, until the bread puffs up

  17. Turn the bread over and cook for 2 more minutes on the other side, until brown

  18. Remove cooked pita bread from the pan and continue to cook the rest of the dough circles the same way

  19. Store in pantry or breadbox for up to a week or in the freezer for up to a month

  20. Great with hummus, sandwich fillings, or tabbouleh, or cut into triangles and toasted, baked, or fried into pita chips
