A variation on pesto with basil. Stir into soups, mix with pasta, spread on bread -- a million uses.

Recipe Ingredients for Pistou (pesto)

1/2 cup mint leaves, loosely packed
1/4 cup parsley, sprigs, loosely packed
1/2 large scallion, chopped (1/2 cup)
2 tbsp extra-virgin olive oil
1 tablespoon water

Recipe Directions for Pistou (pesto)

  1. Pulse mint, parsley, and scallion in a food processor until finely chopped.

  2. With motor running, add oil in a stream, then add water and salt, blending until incorporated.
