This was very tasty. I served over a huge spinach salad for 9 weight watcher points.

Recipe Ingredients for Pistachio Crusted Salmon - 9 weight watcher points

2 tbl olive oil
3 lb salmon fillets
1 cup pistachio nut, finely chopped
1/2 cup flour
1/2 cup orange juice
1/4 cup honey mustard
2 tbl brown sugar, packed
2 tbl sugar free orange marmelade
2 tbl butter
1 salt to taste
1 pepper to taste
1 red pepper flakes to taste

Recipe Directions for Pistachio Crusted Salmon - 9 weight watcher points

  1. In blender or food processor chop nuts until finely chopped. Add flour and pour into a bowl and set aside.

  2. In a small bowl combine 2 tablespoons of the orange juice, mustard, brown sugar, and orange marmelade. Stir until combined.

  3. Spread each fillet with a small amount of mustard mixture then dredge in pistachio mixture.

  4. Heat a large skillet until hot. Spray with cooking spray and add olive oil. Carefully place each fillet in the skillet and cook over med-high heat for about 5 minutes on each side.

  5. Remove salmon from the skillet and place on plate.

  6. Use remaining orange juice to deglaze the skillet. Add butter and melt. While butter is melting add some water to the remaining pistachio mixture to create a paste. Once butter has melted add the paste to the skillet. Add salt, pepper and crushed red pepper to taste. If sauce is too thick add more water.

  7. Once all combined add salmon back into the skillet and simmer for about 10 minutes.
