An adaptation of the Indian dish Chole Saag

Recipe Ingredients for Pinto Saag

6 cups Pinto beans
3 cups Cottage Cheese (1%)
16 oz package Mustard Greens
16 oz package Spinach
6 tbsp Avocado Oil
1 tbsp cumin
1 tbsp coriander
1 tbsp black mustard seeds
1 tsp cayenne
1/2 tsp garlic powder
1/2 tsp onion powder

Recipe Directions for Pinto Saag

Heat the oil in the pan over medium-hight heat. Once hot, add the mustard seeds and fry until they start popping. Add the rest of the spices and cook for a few seconds. Turn the heat down to medium and add the remaining ingredients. Bring to a simmer, and cook for 15-20 minutes.
