This is a really nice, complete meal. Reheats well.

Recipe Ingredients for pinto beans and pork

4 tsp olive oil
10 oz. pork tenderloin
1/4 tsp pepper
1 large onion
6 garlic cloves
2 tomatoes, chopped
1 cup dried pinto beans, soaked overnight
1/2 tsp cumin
1/2 cup water
1/2 tsp salt

Recipe Directions for pinto beans and pork

  1. HEAT OIL

  2. COOK PORK AND PEPPER 8 - 10 MINUTES

  3. ADD ONIONS AND GARLIC, COOK ANOTHER 8 MINUTES.

  4. STIR IN TOMATOES, BEANS, CUMIN AND WATER.

  5. BRING TO A BOIL

  6. REDUCE HEAT AND SIMMER TILL BEANS ARE TENDER, 1 - 2 hours.
