A tasty and spicy one-pot main dish that comes together quickly. Each 269-gram serving is equal to 1 1/3 cups. The calories for the 2 tablespoons of fat free sour cream is included. Serve with tossed green salad and brown rice, if desired (calories not included)

Recipe Ingredients for Pinto Beans & Andouille Sausage

1 tablespoon olive oil
14 1/2 oz pinto beans (rinsed and drained)
12 4/5 oz Andouille sausage (from Trader Joes)
6 cloves garlic (chopped)
1 cup diced onion
1 cup chopped bell pepper (used frozed from T.J.s)
30 oz diced tomatoes (w/ chili peppers)
2 tablespoons lime juice
1 cup fat free sour cream (divided by 8 servings)

Recipe Directions for Pinto Beans & Andouille Sausage

  1. Chop the onion and saute in the olive oil

  2. Chop the garlic and add to the pot

  3. Slice the sausage into rounds and then into halves and add to the pot

  4. Season with teaspoon smoked paprika; stir all together

  5. Add the pinto beans

  6. Add the diced tomatoes

  7. Add the lime juice (approx. 1/2 lime)

  8. Season to taste with Sea Salt, Ground Pepper, pinch of Ground Cayenne Red Pepper & pinch of ground cumin

  9. Stir well and reduce heat

  10. Simmer for 10 minutes
